When you eat out, what is your go to menu item? The salad or the cheesy garlic bread? For me, I would go with the salad…but the whole time I’m chewing those leafy greens, I would be craving that cheesy, butter-soaked garlic bread. Summer is everything good to eat.
Ever since I read To Kill a Mockingbird, that quote has been the motto of my cooking career. Summer brings the best foods; wild salmon, berries, mangoes, avocados, watermelon, and best of all....*drum roll please*....CORN.
I went to the farmer's market today, meandering through the busy and colorful booths when I stumbled upon a sign labelled "SWEET Organic Corn!" I couldn't resist. Something about the words 'sweet' and 'corn' put together just sounds delicious. So I bought some. No, I bought ALOT. Because I knew a fabulous risotto recipe that included the words 'sweet' and 'corn.' I hope you enjoy it.
Life is filled with choices.
I am vegetarian and gluten-free by choice. Save the shocked comments, I've already been called crazy to switch to such a lifestyle. "You're only 16 too?" Yep. "How are you alive? WHAT ABOUT BACON? How can anyone survive without bacon!?" Well, I guess I am.
So why am I depriving myself from life's beautiful gifts of white processed flour or BBQ chicken? To be honest, I used to ask myself the same thing. But then, at a ripe age of 13, I realized that the body doesn't stay the same...in other words, you gain weight, your face gets wrinkly and...wait for it...your butt gets saggy. Now if that doesn't send someone into a serious state of "i-need-to-go-on-a-juice-cleanse" then I don't what will. But being physically in shape isn't the only reason for my health kick.
